POPULAR IN LOUISIANA KIND OF A FRENCH DISH ENJOY DAN:

          CAJUN CHCIKEN MAQUE CHOUX by CHEF DAN:
Serves 4

INGREDIENTS:

3-4 cups of cooked chicken, torn into bite size pieces
2 tablespoons butter
2 cups onions chopped
2 cups celery, chopped
2 cups green bell pepper, chopped
2 tablespoons Kitchen Bouquet
2 tablespoons smoked paprika
3 cloves garlic, minced
1 can tomatoes, diced
2 ears of corn, stripped and cobs milked
3 cups chicken broth
1/2 teaspoons ground red pepper
1 teaspoon each cumin, cinnamon, and sugar
1 teaspoon Cajun/Creole seasoning, such as JOE’S Stuff seasoning
1 cup long grain rice
 Freshly cracked ground black pepper
Kosher salt, to taste

DIRECTIONS:

1.    Heat he butter in a Dutch oven and sauté the onion, celery, and bell pepper over medium-heat.
2.    Add Kitchen Bouquet, smoked paprika and sauté for about 5 min.
3.    Add the garlic and sauté for 1 minute.
4.    Add the broth rice, tomatoes and spices ,cover cook 20 minutes.
5.    Add the chicken, corn and sugar and bring to a boil, reduce heat cover and simmer for 10 minutes, stirring several times.
6.    Season with salt and pepper to your taste.  ENJOY DAN:  SAVOUR!
