SHRIMP MARINATED WITH GARLIC AND OIL WHAT COULD BE BETTER ENJOY DAN:

                 SHRIMP (MY WAY) WITH LOT’S OF GARLIC by CHEF DAN:
Serves 4

INGREDIENTS:

1 pound shrimp, peeled, deveined, and tails removed
8 garlic cloves. 2 minced, 6 thinly sliced
2 tablespoon olive oil
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons brown sugar
2 tablespoons white wine
2 tablespoons lime juice
1/2-tablespoon garlic chili sauce
1 tablespoons toasted sesame oil
2 teaspoons cornstarch
6 scallions, greens cut into 11-inch pieces and whites sliced thin
1/2-cup dry roasted peanuts

DIRECTIONS:

1.     Combine minced garlic with shrimp, 1 tablespoons olive oil, and salt in a bowl.
2.     Let shrimp marinate for 30 minutes.
3.     Meanwhile, whisk soy sauce, fish sauce, oyster sauce, sugar, sesame oil, lime juice, garlic chili sauce, and cornstarch in a bowl.
4.     Combine sliced garlic with scallion’s whites and peanuts in a bowl.
5.     Heat 1 tablespoon oil in a skillet over high-heat until just smoking.
6.     Add garlic- scallion mixture and cook stirring frequently, or until they just begin to brown, about 30-40 seconds.
7.     Add shrimp and reduce heat to medium-low and cook until shrimp are no longer pink, about 1-1/2minutes.
8.     Whisk soy sauce mixture and add to skillet.
9.     Return to high-heat and cook, stirring constantly, until sauce thickens and shrimp are cooked through, avbout1-2 minutes.
10.                        Serve with jasmine rice and           ENJOY DAN           SAVOUR!
