STIR-FRY BOK CHOY WITH HOISIN SAUCE

INGREDIENTS:
1
heat bok choy
1-tablespoon
sesame oil
1/3-cup
vegetable broth
2-tablespoon
hoisin sauce
1-tablespoon
EACH rice vinegar, and soy sauce
1-thumb-size
fresh ginger, peeled and chopped
1/4-teaspoon
siracha
DIRECTIONS:
1.
Cut
root end of bok choy, then cut thick white stems apart from the drake leaves so
you can cook them separately.
2.
Cut
stems in slices about 3/8-inch thick and leaves about 1/2-inch thick.
3.
In
a bowl, stir together broth and next 3 ingredients + siracha.
4.
Heat
a wok for 1-2 minutes, then add oil and when sizzling.
5.
Add
stems and stir-fry 2 minutes.
6.
Add
chopped ginger, stir to blend and stir-fry 2 more minutes.
7.
Add
boc leaves and broth mixture, stir, cover and cook 2 more minutes.
8.
Uncover
ad cook until sauce thickens slightly.
9.
Season
with salt and pepper
