INSTANT
POT HAWAIIAN MOCHIKO CHICKEN by CHEF DAN:
Serves

INGREDIENTS:
4-boneless, skinless chicken breast cut into
cubes
2/3-cups
potato starch
1/3-cup
mochiko, (sweet rice flour)
1/4-cup
honey or pure maple syrup
1/3-cup
soy sauces
1/2-teaspoon
sesame oil
2-tablespoons
oyster sauce
1-(14.5
Oz) can pineapple Tibbets
1-cup
pineapple juice
1-gatlic
cloves, minced
1/2-teaspoon
fresh ginger, grated
2-scallions,
chopped
2-cups
bone broth
1-(14.5
Oz) can pineapple tidbits
1/2-teaspoon
toasted sesame seeds
1/4-teaspoon
red pepper flakes
DIRECTIONS:
1.
In
a large sealable container, combine potato starch and next 10 ingredient.
2.
Add
chicken and marinate overnight.
3.
In
an Instant pot press SAUTE and when pot is hot.
4.
Add
marinated chicken and sauté for 4-5 minutes.
5.
Add
broth and pineapple tidbits.
6.
Place
lid on Instant Pot and seal pressure value.
7.
Press
PRESSURE COOKER and on high cook for 13 minutes.
8.
When
time is up hit CANCEL and allow 10 minutes to naturally release pressure.
9.
Serve
over a bed of rice or on a bed of lettuce.

Top
with toasted sesame seeds and red pepper flakes.
