BLUEBERRY PANCAKES WITH NUTELLA ENJOY DAN:


            BLUEBERRY PANCAKES WITH NUTELLA by CHEF DAN:
Serves 4

INGREDIENTS
3 eggs, whites and yolks separated
2 cups buttermilk
1/2-cup melted butter
2 cups all-purpose flour
1-teaspoon EACH baking soda and vanilla extract
1 cup blueberries
1 cup strawberries
6-tablespoons Nutella (hazelnut spread)
1/4-cup butter

DIRECTIONS:
1.   Beat egg yolks well, then whisk in the buttermilk and butter.
2.   Sift dry ingredients over egg mixture and fold in.
3.   Whisk egg whites to soft peaks and fold into batter.
4.   Add butter ta skillet over medium-heat and when sizzling.
5.   Add 1/4- batter and cook until bubbles form.
6.   Before flipping the pancakes, scatter with a few blueberries and then flip.
7.   Cook until golden.
8.   When ready to serve, simply spread layer of Nutella on top of each pancake.
9.   Top with chopped strawberries.
