APPETIZERS SERVED ON CRACKERS by CHEF DAN:

 JALAPENOS CHEDDAR
INGREDIENTS:
1/2-cup EACH softened cream cheese and shredded smoked cheddar cheese
1 scallion, bias sliced into 1/2-inch pieces
2 fresh blackened jalapenos, thinly sliced
DIRECTIONS:
1.   Spread mixture on a cracker and top with jalapeno.

PEAR CHUTNEY WITH GOAT CHEESE
Serves 8
INGREDIENTS:
4 pears, Bosc or Anjou
1-cup brown sugar
1-cup craisins
1-cup vinegar
2-tablespoon fresh ginger, grated
1/2-teaspoon EACH paprika and Chinese 5 spice powder
1/4-teaspoon salt
Cilantro leaves, torn
DIRECTIONS:
1.   Peel and cut pears into 1/2-inch pieces.
2.   In a skillet over medium-heat add pears, and next 8 ingredients.
3.   Cook for 25-30 minutes or until liquid evaporates and sugar caramelized.
4.   Stirring frequently, he last 10 minutes.
5.   Serve on a cracker of your choice, top with cilantro leaves.

APPLE-CRANBERRY CHUTNEY:
Makes 2 cups
INGREDIENTS:
2 cooking apples
1 cup fresh cranberries
1/2-chopped onion
1/4-cup apple cider vinegar
1/3-cup brown sugar
1 tablespoon orange zest
1-2-inch fresh ginger peeled and grated
1-1/2-teaspoon EACH cinnamon and allspice
Pinch of ground cloves
DIRECTIONS:
1.   Put all ingredients in a skillet, bring to a boil, reduce to low simmer.
2.   Cover and cook 20 minutes.
3.   Place on cracker of your choice.
