SPICY AVOCADO SALAD WITH ASIAN DRESSING ENJOY DAN:

           SPICY AVOCADO SALAD WITH ASIAN DRESSING by CHEF DAN:
Serves 4-6

INGREDIENTS:
2 avocados, halved seeds removed, peeled, and roughly chopped
1 cucumber, slice lengthwise, seeds scooped out, and cut into 1/2-inch thick halve rounds
2 garlic cloves, smashed
1/2-cup mint leaves
1/2-cup cilantro

ASIAN DRESSING:
1 tablespoon EACH mirin, and sweet chili sauce
1-1/2-tablspoons rice wine vinegar
1 teaspoons pure maple syrup
1 tablespoon olive oil
1/2-teaspoon red chili flakes
 2 tablespoons sesame seeds for garnish

MAKE ASIAN DRESSING:
1.   Place mirin and next4 ingredients in a bowl, whisk until well combined.
2.   Set aside for 10-14 minutes.
3.   Place avocados, cucumber, garlic, mint leaves, and cilantro in a salad bowl, gently toss to combine.
4.   Toss dressing over and again gently toss to combine.
5.   Top with sesame seeds.
