ASIAN PEAR SALAD WITH GOAT CHEESE ENJOY DAN:

           ASIAN PEAR SALAD WITH GOAT CHEESE by CHEF DAN:
Serves 4

INGREDIENTS:
2 tablespoons olive oil
1 tablespoon lime juice
1 teaspoon pure maple syrup
1/2-teaspoon EACH dried fennel and dried thyme
Sea salt and freshly ground black pepper to taste
4-cups fresh arugula
2 Asian pears, peeled cored and cut into slices
1/2-cup sunflower seeds
1/4- cup crumbled goat cheese

DRESSING.
1.   in a bowl, combine olive oil and next 4 ingredients mix well.
1.   Season with salt and pepper.

SALAD:
1.   Toss the arugula, pear slices, and sunflower seeds in a bowl.
2.   Toss with the dressing.
3.   Complete by topping the salad with crumbled goat cheese.
