SHRIMP VINDALOO MY WAY by

INGREDIENTS:
1
teaspoon EACH kosher salt, ground turmeric, black pepper, and ground coriander
1/2-teaspoon
EACH ground cumin, jalapeno powder, ground cinnamon, and ground ginger
2
teaspoons Siracha
1/4-teaspoon
EACH ground cloves, and ground cardamom
1-1/2-teaspoon
cider vinegar
3
tablespoon olive oil
1
onion, chopped
3
garlic cloves, smashed
1(24
Oz) tub Vindaloo Indian simmering sauce (from Costco)
1-pound
large shrimp, peeled and deveined
2
tablespoon lemon juice
DIRECTIONS:
1.
In
a bowl, add first 12 ingredients, mix to form a paste, set aside.
2.
Add
oil to a skillet over medium-heat and when sizzling.
3.
Add
onion and garlic and sauté for 4 minutes.
4.
Add
in the paste, and stir for 30 seconds.
5.
Add
the Vindaloo sauce.
6.
Once
mixture begins to simmer lower heat to low, cover and simmer for about 15-18
minutes.
7.
Stirring
occasionally, add the shrimp, stir to coat.

Increase
heat to medium and cook, stirring frequently for 3 minutes or until shrimp turn
pink.
10.
Add
lemon juice and serve over rice or rice noodles.
