HABANERO PEPPER JAM

Makes
4 pints
INGREDIENTS:
6
habaneros peppers
4
cups granulated sugar
1-1/4-cups
cider vinegar
1/4-cup
lemon juice
3
ounces liquid fruit pectin
1
tablespoon butter
salt
to taste
4
drops food coloring
DIRECTIONS:
1.
Add
habanero peppers to a food processor and roughly chop.
2.
Do
not puree.
3.
Scoop
out the peppers and add to a skillet.
4.
Add
sugar, vinegar, lemon juice, butter, and salt.
5.
Bring
to a boil; reduce heat to low and simmer for 10 minutes.
6.
Return
heat to high and bring mixture to a rolling boil.
7.
Stir
pectin in and boil 1 minute, stirring constantly.
8.
Remove
from heat.
9.
Add
food coloring, stir until incorporated.
10.
Ladle
jam in to sterilized jars and cover.
11.
Process
jars in boiling hot water bath for 10 minutes.
12.
Remove
let cool overnight.
