SWORD FISH WITH WINE BASTED
GRAPES by CHEF DAN:
Serves 2-3
INGREDIENTS:
2 swordfish steaks or
mahi-mahi
1 cup sake
1 cup soy sauce
3 cloves garlic, crushed
1 cup white wine
1 cup grapes, red or white
1/4- cup fresh basil, chopped
1 tablespoon sesame oil
1 tablespoon lemon or lime
juice
3 tablespoons butter
DIRECTIONS”
1.
Marinate
swordfish in sake, soy sauce, sesame oil, and garlic.

Refrigerate 3-4
hours.
3.
Take out of
marinate and pat dry.
4.
In a skillet add
butter over medium-high heat.
5.
Add swordfish
steaks and fry for about 3-4 minutes each side.
6.
Meanwhile gently simmer the wine, lemon juice,
basil and grapes for about 2 minutes.
7.
Remove from heat
and serve over the swordfish.
