MASHED
POTATOES WITH ROASTED GARLIC by CHEF DAN:
Serves
4
INGREDIENTS:
2
large garlic heads
2
tablespoons olive oil
5
Yukon golden potatoes, about 2 pounds, peeled and cut into 1/4-cubes
3
tablespoon butter
1/2-cup
buttermilk, plus more if needed
1/2-cup
soften cream cheese
Sea
salt and Seasoned Pepper Medley to taste
Top
with fresh chives
DIRECTIONS:
(PREHEAT OVEN TO 400 F)
1.
Expose
the cloves of garlic heads by slicing of the top 1/2-inch.
2.
Place
the prepared baking dish, and drizzle with olive oil.
3.
Wrap
each clove with aluminum foil and bake for 55 minutes.
4.
Remove
from oven and let cool.
5.
Squeeze
each garlic clove into a bowl and mash with a fork.
6.
Reserve
any garlic oil remaining in the baking
dish.
7.
Pour
1-inch of water into a pot that has steamer basket.
8.
Place
the potatoes in a steamer basket and set over boiling water.
9.
Cover
and steam for 15-20 minutes.
10.
Transfer
to a bowl.
11.
Empty
the pot and wipe dry; return potatoes to the warm pot.
12.
Add
butter, cream cheese and roasted garlic and mesh well with a potato masher
13.
Add
buttermilk, salt and pepper to taste.
14.
Continue
to mesh, adding more buttermilk 1 tablespoon at a time.
15.
Serve
with reserved garlic oil.
16.
Top
with fresh chives.
