BUTTERNUT
SQUASH ON THE TRAEGER PELLET GRILL by CHEF DAN:
Serves
4
INGREDIENTS:
1
butternut squash
Maple
syrup
5
tablespoon butter, cubed
4
tablespoon brown sugar
1
tablespoon Seasoned Pepper Medley
DIRECTIONS:
1.
Cut
the butternut squash in half lengthwise and scoop out the seeds.
2.
Start
the Traeger grill on Smoke with lid open until the fire is established (4-5
minutes).
3.
Place
each squash face down on the rack of the pellet grill.
4.
Cook
on high smoke for 30 minutes.
5.
Then
turn squash over and smoke for another 30 minutes.
6.
Place
each squash half on tin foil big enough to wrap it in.
7.
Cover
with squash maple syrup, sprinkle on brown sugar, cubed butter, and pepper.
8.
Close
the foil wrap by rolling the ends together and folding up the remaining two
sides to form an air tight cover.
9.
Place
back on pallet grill (set to 400 F) and grill 30-40 minutes.
10.
Unfold
the tin foil carefully to keep the syrup mixture on top.
11.
Adding
more syrup as needed.
12.
Scooping
out with a spoon, and serve.
