AU GRATIN POTATOES FOR THE SOUP
KITCHEN by CHEF DAN:
Serves 20
INGREDIENTS:
7
tablespoons butter
7
tablespoons all-purpose flour
1
teaspoon salt
3/4-teaspoon
pepper
2
cups milk
2
cups half-and-half
12
potatoes, thinly sliced on Madeline
1
onion, chopped
4
garlic cloves, minced
1
teaspoon nutmeg
2
tablespoons dried parsley flakes
2-1/2-cups
grated cheddar cheese
DIRECTIONS:
(PREHEAT OVEN TO 375 DEGREES)
1.
Grease
a baking dish.
2.
In
a skillet melt butter, over medium-heat when sizzling.
3.
Stir
in flour, salt and pepper.
4.
Blend
in milk, and half-and-half.
5.
Cook
on medium-high heat, stirring constantly, until heated through.
6.
Set
aside.
7.
Layer
1/3-of potatoes slices, half the onion, 1/2-the garlic, 1/3- of the parsley,
1/3- cheese, 1//2 nutmeg, and 1/3-sauce in the casserole dish.
8.
Repeat
layers.
9.
Top
with reaming potatoes, parsley, cheese, and sauce.
10.
Bake
in preheated oven for 1-hour to 1-1/4-hours.
11.
Bake
until sauce is bubbly and the potatoes are tender.
