FOREST COFFEE CAKE FOR THE LADIES AT THE SOUP KITCHEN

INGREDIENTS:
2-cups
white sugar
3/4-cup
unsweetened cocoa powder
1-1/2-teaspoon
baking powder
3/4-teaspoon
baking soda
3
eggs
3
cups all-purpose flour
1
cup milk
1/2-cup
vegetables oil
2
tablespoon vanilla extract
1
cup semi-sweet chocolate chips
1
(21 Oz) can cherry pie filling
1/2-teaspoon
salt
TOPPING:
1
cup bisquick
1/2-cup
white sugar
1/4-cup
butter
1/2-cup
semi-sweet chocolate chips
DIRECTIONS: (PRE-HEAT OVEN TO 750 DEGREES)
1.
In a mixing bowl combine flour, sugar, cocoa, baking powder, baking soda and
salt.
2.
Add
eggs, chocolate chips, milk oil, and vanilla, whip until blended.
3.
Pour
batter into greased baking pan.
4.
Drop
cherry pie filling by the teaspoons in even rows into the batter
5.
With
a blender combine the bisques, sugar and butter to form loose crumbs.
6.
Add
the chocolate chips.
7.
Sprinkle
the topping evenly over the top of the cake.
8.
Bake
in pre-heated oven for 55 minutes, or until cake is golden brown and when
tested with a toothpick.
