FAMILY FAVORITE CONED BEEF HASH ENJOY DAN:


                           CORNED BEEF HASH by CHEF DAN:
Serves 4

INGREDIENTS:
1 pound cooked corn beef, finely chopped
2 russet potatoes, peeled cut into 1/4-inch dice
1 onion, finely chopped
1 red bell pepper
2 tablespoons butter
1 (16 Oz (can) diced beets
4 eggs
1/4-teaspoon coarse salt
1/2-teaspoon freshly ground black pepper
2 tablespoons milk
1 few drops of hot pepper sauce

DIRECTIONS:
1.   In a large skillet cook onion, in butter until tender.
2.   Stir in potatoes, beets, beef, salt and pepper.
3.   Cook over medium-heat for 8-10 minutes or until brown on the bottom.
4.   Stir in milk and hot sauce.
5.   Make 4 holes in hash and break one egg into each.
6.   Cook over moderately low-heat, covered; cook for 5 minutes or until desired doneness.
7.   Season with salt and pepper.
