QUINOA
BROWNIES (THE MOTHER GRAIN) FOR THE LADIES IN THE SOUP KITCHEN

24 squares
INGREDIENTS:
1/2-cup
butter, softened
8
(Oz) bitter sweet chocolate, coarsely chopped
1
teaspoon espresso
1/2-cup
brown sugar
2
eggs
3/4-cup
quinoa flour (directions to follow)
1
teaspoon baking powder
1/2-teaspoon
salt
1
cup cooked quinoa
1
cup semi-sweet chocolate chips
DIRECTIONS: (PRE-HEAT OVEN TO 350 DEGREES)
1.
Cook
quinoa according to package directions.
2.
Mix
flour, baking powder, and salt together in a bowl, set aside.
3.
In
a sauce pan, melt butter and chocolate over medium-low heat, stirring frequently.
4.
When
melted add espresso and mix well.
5.
Pour
the chocolate mixture into a bowl: set aside, and let cool.
6.
In
a bowl whisk eggs, sugar, and vanilla until smooth.
7.
Slowly
pour into melted chocolate and mix well.
8.
Working
in small batches, gently mix in the flour mixture until completely incorporated.
9.
Ok
now fold in the cooked quinoa.
10.
Stir
in semi-sweet chocolate chips
11.
Spread
the batter evenly into pre-pared baking pan.
12.
Bake
for about 25-30 minutes, let cool 30 minutes.
13.
Cut
into squares.
14.
QUINOA FLOUR:
Grind
raw quinoa into a powder in a clean coffee grinder.
