WATERMELION SALAD BASIL FETA AND JALAPENO PEPPER ENJOY DAN:

    WATERMELON SALAD BASIL FETA AND JALAPENO PEPPER by CHEF DAN:
Serves 4

INGREDIENTS:
1 (12 Oz) package rice noodles
1/4-cup light soy sauce
1/4-balsamic vinegar
 2-tablespoon sesame oil
2 garlic cloves, minced
2 tablespoon honey
1 teaspoon Sriracha
4 cups watermelon, cut into 1-inch chunks
1 English cucumber, julienned
1 cup radishes, julienned
3/4-cup fresh basil, roughly chopped
1 jalapeno, seeds and membranes removed
1/4-cup feta cheese
 1 pound shrimp, peeled and deveined
2 teaspoon EACH sesame seeds, and hemp seeds

DIRECTIONS:
1.   Bring 4 cups of water to a boil; remove from heat and toss in rice noodles.
2.   Let them sit for 20 minutes, drain reserving the liquid.
3.   Place drained noodles in a bowl
4.   In a bowl whisk together soy sauce, 1 tablespoon balsamic vinegar, oil, garlic, honey, and Sriracha.
5.   In separate bowl, toss together, watermelon, cucumber, radishes, scallions, remaining vinegar, jalapeno and salt.
6.   Let stand about 15 minutes.
7.   Pour reserved liquid into a pot and bring to a boil.
8.   Add shrimp and cook for 2 minutes.
9.   Remove shrimp and add to a bowl along with vegetables, basil and noodles.
10.                Toss all ingredients to blend together.
11.                Top with sesame seeds and feta cheese.
