SHRIMP MASSAMUN CURRY PASTE ENJOY DAN:

             SHRIMP WITH MASSAMUN CURRY PASTE by CHEF DAN:
Serves 4

INGREDIENTS:
2 tablespoons grape-seed oil
1 onion, chopped
1 tablespoon Massamun curry paste
1 teaspoon EACH ground coriander, Tandoori masaala, berbere powder ground turmeric, and ground chipotle powder
2 teaspoons fish sauce
1 tablespoon ginger-garlic paste
1 (15 Oz) can fire roasted tomatoes
1-1/2-pounds raw peeled and deveined
Chopped fresh cilantro, for garnish

DIRECTIONS:
1.   In a mortar and pestle grind ginger and garlic into a paste.
2.   In a skillet add oil over medium-high heat when sizzling.
3.   Add Massamun curry paste, ginger garlic paste and cook for 40 seconds or until fragrant.
4.   Add onion, ginger garlic paste, and sauté for 4 minutes.
5.   Add all spices, powders, fish sauce, tomatoes and shrimp and cook for 2-1/2-to 3 minutes.
6.   Remove from heat and add cilantro.
