SWEET POTATO MARSHMALLOW CASSEROLE ENJOY DAN:


SWEET POTATO MARSHMALLOW CASSEROLE by CHEF DAN:
Serves 8-10

INGREDIENTS:
8 sweet potatoes
1/3-cup butter, softened
3/4-cup brown sugar
1/2-cup orange juice
1-egg
1/2-teaspoon vanilla extract
1/4-teaspoon EACH cinnamon & pumpkin pie spice
1-(10.5 Oz) bag miniature marshmallows
1-cup chopped pecans

DIRECTIONS: (PREHEAT OVEN TO 400 F-THEN REDUCE HEAT TO 350 F)
1.   In a prepared baking sheet.
2.   Bake sweet potatoes for 1-hour or until tender.
3.   Let sweet potatoes cool.
4.   Then peel off skin.
5.   Reduce heat to 350.
6.   Add butter & next 6 ingredients.
7.   With a potato masher, beat until creamy.
8.   Transfer potato mixture to a prepared baking dish.
9.   Bake for 30 minutes.
10  Remove from oven & then top with marshmallows & pecans
11  Return to oven & bake about 10 minutes.
