GROUND TURKEY STUFFED ACORN SQUASH by

Serves

INGREDIENTS:
1-1/2-pounds
ground turkey
4-small
acorn squash, halved & seeded
2-apples,
finely diced
1-egg
salt
& pepper
2-tablespoons
olive oil
1-onion,
diced
1/2-cup
craisins, (from Costco)
1-teaspoon
EACH Herbs de Provence, & dried sage
Grated
Parmesan cheese for serving
DIRECTIONS:
(PREHEAT OVEN TO 425 F
1.
Lightly
mist acorn squash haves with olive oil.
2.
Season
with salt & pepper.
3.
Place
on a prepared baking sheet, & bake for 15 minutes just long enough to heat the squash.
4.
Add
oil to a skillet over medium-high heat when sizzling.
5.
Add
ground turkey; cook until no longer pink.
6.
Then
add remaining ingredients.
7.
Stir
to combine
8.
Spoon
turkey mixture into all 8 acorn halves.
9.
Place
squash on a Prepared baking sheet.

Fill
sheet with 1/2-inch water.

Cover
with foil & bake for 25 minutes.

Uncover
& bake for another 20 minutes.

Sprinkle
with Parmesan cheese.
