KOREAN MISO HONEY GLAZED COD by

INGREDIENTS:
1-1/2-pound
fresh cod
2-tablespoons
honey
1-1/2-tablespoons
rice vinegar
1-tablespoon
EACH white miso paste, mirin, & gochujang
1-teaspoon
EACH soy sauce & Old Bay seasoning
2-garlic
cloves, smashed
1-inch
fresh ginger m peeled & grated
1-teaspoon
sesame oil
8-cremini
mushrooms, quartered
1/2-teaspoon
salt pepper
2-tablespoon
toasted sesame seeds
2-scallions,
bias sliced into 1/2-inch slices
DIRECTIONS:
(PREHEAT BROILER & THEN PREHEAT OVEN TO O375 F)
1.
Line
a baking sheet with aluminum foil & sprayed with Pam.
2.
Arrange
the cod fillets on the baking sheet.
3.
In
a bowl, whisk together honey & next 9 ingredients:

Take
out 2 tablespoons of the honey mixture & spread on the fish.
5.
Then
let fish rest in the refrigerator for at least 30 minutes.
6.
Place
baking dish 8-inch below boiler elements.
7.
Scatter
the mushrooms around the fish & slide into the rack.

Brush
the remaining honey mixture over the fish.
9.
Broil
the fish for 3-5 minutes, until bubbly & charred in places.

Return
pan to the oven & then bake for 6-10 minutes

Server
over jasmine rice & top with toasted sesame seeds & scallions.
