EGGS IN ACORN SQUASH ENJOY DAN:


                         EGGS IN ACORN SQUASH by CHEF DAN:
Serves 4

INGREDIENTS:
1-acorn squash
1-tablespoon olive oil
salt & pepper to taste
1/4-teaspoon EACH chili powder, cumin, paprika, & ground coriander
2-eggs
1-tablespoon roasted pumpkin seeds

DIRECTIONS: (PREHEAT OVEN TO 450 F)
1.   Line a baking sheet with aluminum foil.
2.   Slice acorn squash into 4 1-inch thick rings.
3.   Remove the seeds
4.   Season with salt, pepper & next 4 ingredients.
5.   On a prepared baking sheet place the squash rings.
6.   Bake for 20 minutes or until tender.
7.   Crack an egg into each ring, season with splash of salt.
8.   Bake until the whites are set & the yolks are runny.
9.   5-10 minutes.
10  Top with roasted pumpkin seeds.
