NORTH AMERICAN INDIAN ACORN BREAD by
CHEF DAN:
makes
2 loves
INGREDIENTS:
6
tablespoons cornmeal
1/2-cup
cold water
1-cup
boiling water
1-tablespoon
sea salt
1
tablespoon butter
1
package dry yeast
1/2-cup
lukewarm water
1-cup
mashed potatoes
2-cups
all-purpose flour
2-cups
finely ground leached acorn meal (buy 16 Oz) bag at Amazon
(also
called acorn starch powder flour)
DIRECTIONS:
(PREHEAT OVEN TO 375 F)
1.
Mix
cornmeal with cold water, add boiling water and cook 2 minutes.

Stirring
occasionally.
3.
Add
salt and butter and cool to lukewarm.
4.
Soften
yeast in lukewarm water.
5.
Add
remaining ingredients to the corn mixture, along with yeast.
6.
Kneads
to a stiff dough.
7.
Dough
will be sticky.
8.
Cover
and let rise in a warm place until double in bulk.
9.
Punch
down, shape into 2 loaves, cover and let rise until double in bulk.
10
Bake
at 375 F for45 minutes.
