chicken salad with apple cider enjoy dan:


              CHICKEN SALAD WITH APPLE CIDER by CHEF DAN
serves 2

INGREDIENTS:
1/2-cup cranberries
1/2-cup spinach
10 cherry tomatoes sliced
1/2-cup toasted walnuts
1 cup Rotisserie cooked chicken cubed
1 apple diced
1/2-cupt goat cheese
1-apple cider vinaigrette, recipe to follow

DIRECTIONS;
1.   Lay a layer of spinach at the base of a bowl.
2.   Add cranberries and next 6 ingredients:
3.   Gently toss.
4.   Drizzle the apple cider vinaigrette, gently combine.
5.   Top with goat cheese and walnuts.

APPLE CIDER VINAIGRETTE:
1 garlic clove smashed
2-tablespoon EACH apple cider, lemon juice, and honey
3 tablespoon olive oil
salt and pepper to taste.

DIRECTIONS:
1.   Combine all vinaigrette into a Mason jar
2.   Seal the lid and shake the blazes out of it.
3.   Store for up to 1 week in the refrigerator.
