APPLE WITH APPLE CIDER VINAIGRETTE ENJOY DAN:


           SALAD WITH APPLE CIDER VINAIGRETTE by CHEF DAN:
serves 2

INGREDIENTS:
1/2-cup Kale or spinach
1/2-cup Fresh Cranberries
1/2-cup cherry tomatoes sliced
1/2-cup toasted walnuts
1 cup Rotisserie cooked chicken
1/2-cup apples diced
1/2-cup Feta cheese
1 cup apple cider vinaigrette (recipe to follow)

INGREDIENTS:
1.   Lay a layer of kale at the base of the bowl.
2.   Add Cranberries and next 5 ingredients:
3.   Gently toss.
4.   Drizzle with app cider vinaigrette.

APPLE CIDER VINAIGRETTE:
1 garlic clove minced
2 tablespoon EACH apple cider juice, lemon juice, and maple syrup
3 tablespoon olive oil
sea salt and freshly ground black pepper to taste

DIRECTIONS:
1.   Combine all vinaigrette ingredients in a Mason jar.
2.   Shake the devil out of it.
3.   Season with salt and pepper.
4.   Store in the refrigerator for couple of weeks.
