STEAMED CAULIFLOWER WITH CHEESE SAUCE ENJOY DAN:

          STEAMED CAULIFLOWER WITH CHEESE SAUCE by CHEF DAN:
Serves 4

INGREDIENTS:
1 head of cauliflower
1 tablespoon butter
1 tablespoon almond flour
1/2-teaspoon EACH Dijon mustard, and celery powder
Pinch EACH allspice and nutmeg
3/4-cup almond milk
1cup shredded Cheddar cheese
Sea salt and freshly ground black pepper to taste

DIRECTIONS:
1.   Separate the cauliflower florets and put into a steaming basket.
2.   With about 1/2-inch of steaming water.
3.   Cover and let the cauliflower steam for 5-8 minutes.

CHEESE SAUCE:
1.   Melt the butter in skillet over medium-heat when sizzling.
2.   Add flour and next 5 ingredients and cook, whisking constantly, for about 2 minutes.
3.   Gradually whisk in the milk; continue cooking stirring constantly until thickened.
4.   Stir in the shredded cheese, continue cooking, stirring, until the cheese has melted.
5.   Add salt and pepper to taste.
