APPLE PINE NUTS AND GOAT CHEESE ENJOY DAN:

         APPLE PINE NUTS AND GOAT CHEESE SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
4 cups arugula
2 apples, cored and thinly sliced
1/4-cup craisins
1/2-cup grapes, halved
2 tablespoons olive oil
4 teaspoons balsamic vinegar
1 tablespoons EACH Dijon mustard and pure maple syrup
2 teaspoons lemon juice
1 garlic clove, minced
3 tablespoon pine nuts, toasted
2 tablespoon crumbled goat cheese.

DIRECTIONS:
1.   In a salad bowl combine arugula, apple, craisins, and grapes.
2.   In another bowl whisk together, oil and next 5 ingredients.
3.   Pour over salad and toss to coat.
4.   Sprinkle with walnuts and goat cheese.
