HOW TO MAKE CURRY POWDER MY WAY by
CHEF DAN:
Makes
about 1/3-cup
INGREDEINTS:
2
teaspoons cumin seeds
2
teaspoons coriander seeds
2
teaspoons fenugreek seeds
2
teaspoons kalonji seeds
2
teaspoons ground turmeric
2
teaspoons red pepper flakes
1
teaspoon yellow mustard seeds
1
teaspoon cardamom seeds
1
teaspoon cloves
1
teaspoon chili powder
1
teaspoon multi colored peppercorns
1/2-teaspoon
ground cinnamon
DIRECTIONS:
1.
In
a dry cast-iron fry pan toast the seeds until they start to pop.
2.
Then
place in a bowl and let cool.
3.
Then
place in a spice grinder and grind until smooth.
4.
Add
the ground cinnamon to the grinder, and grind with spices.
5.
Place
in a sealed container and store for 2 months.
