APPLE SALAD WITH MARINATED MUSHROOMS by
CHEF DAN:

MARINATED
MUSHROOMS:
8
cremini mushrooms
4
shitake mushrooms
1
cup red wine
1/4-cup
red wine vinegar
6
cups water
2
tablespoon whole black peppercorn
2
tablespoons sea salt
1
spring rosemary pinch of red pepper flakes
APPLE
SALAD:
1
Granny Smith apple, peeled and corded
1
head radicchio
1/4-teaspoon
EACH flax seeds, chai seeds and caraway seeds
1/4-cup
red wine vinegar
1
teaspoon sea salt
Freshly
ground black pepper to taste
1/4-cup
olive oil
MUSHROOM
MARINATE:
1.
Halve
the cremini mushrooms, cut the shitake into 1-inch pieces.
2.
Pour
the wine and vinegar to a skillet and add the water, peppercorns, water and
bring to a boil.
3.
Add
the rosemary spring to the skillet.
4.
Then
add the mushrooms, red pepper flakes and stir.
5.
Return
to boil; then lower heat cover and simmer for 20 minutes.
6.
Drain
1-1/2-cups of the marinated mushrooms
and place in a salad bowl.
APPLE
SALAD:
1.
Cut
the apples into 1//8-inch julienne and toss in with the mushrooms.
2.
Add
the radicchio, and next 7 ingredients then add the oil and toss well to mix.
