SALMON WITH STRAWBERRY FIG REDUCTION ENJOY DAN:

       SALMON WITH STRAWBERRY FIG REDUCTION by CHEF DAN:
Serves 4

INGREDIENTS:
1 fillet of salmon
3 tablespoons Nonna Pia’s strawberry fig reduction (bought at Costco)
1/2-teaspoon EACH ground cinnamon and ground allspice
1 tablespoon lemon zest
1/2-English cucumber, diced
2 tablespoons Thai sweet and sour chili sauce

DIRECTIONS:
1.   Combine 2 T strawberry fig reduction with cinnamon and allspice.
2.   Mix thoroughly.
3.   Place fillet in baking dish and coat with reduction.
4.   Place in the refrigerate an marinate up to 4 hours.
5.   Grill on BBQ to desired doneness.
6.   Remove a place on a plate and drizzle 1 T reduction ontop.
7.   Top with lemon zest.
8.   Toss cucumber with Thai sweet and sour chili sauce.
