ARCTIC ICE COD FILLET

INGREDIENTS:
1
(12 Oz) fillet arctic char, rinsed, and patted dry
1
tablespoon butter
1
punch of kosher salt
Zest
from 1 lemon
1
tablespoon lemon juice
2
tablespoon olive oil
2
cloves garlic
1/4-cup
sherry wine
1/4-EACH
kosher salt, smoked paprika, ground rosemary, and ginger powder
2
tablespoon Parmesan cheese
2
slice of tomato
A
dash of black pepper
A
dash of cayenne pepper.
DIRECTIONS:
(PREHEAT THE OVEN TO 425 F)
1.
Season
arctic char with butter and lemon zest.
2.
Place
in a prepared baking dish.
3.
Combine lemon juice and next 7 ingredients in a blender.
4.
Pulse until well blended.
5.
Spread
mixture over fish and season with black pepper and cayenne pepper.
6.
Place
tomato slices over the fillets and top with Parmesan cheese.
7.
Bake
in preheated oven for about 8-12 minutes, basting with juices halfway through.
8.
When
the fish is close to being cooked, switch the oven to the boiler.
9.
Broil
for 2 minutes or until browned.
