CAULIFLOWER RICE PILAF ENJOY DAN:

                         CAULIFLOWER RICE PILAF by CHEF DAN:
Serves 2

INGREDIENTS:
1 head cauliflower
1 onion, diced
2 garlic cloves, minced
 1/4-cup craisins
1/2-cup slivered almond, toasted
2 teaspoons turmeric
1/2-teaspoon EACH cumin and cinnamon
1 teaspoon black pepper

DIRECTIONS:
1.   Wash and cut cauliflower into florets, remove steams.
2.   Process cauliflower florets in a food processor and pulse until cauliflower looks like rice.
3.   In a skillet over medium-heat, sauté diced onion for about 5 minutes.
4.   Add garlic and sauté for 1 minute.
5.   Add cauliflower rice and sauté over medium-heat for about 5 minutes.
6.   Sprinkle with turmeric and next 3 ingredients over the cauliflower rice.
7.   Mix until spices are evenly disturbed.
8.    Add crisians and slivered almonds, mixing well and stirring for 2 more minutes.
9.   Evenly divide between 2 bowls.
