CHICKEN & GARBANZO BEANS SALAD FOR THE SOUP KITCHEN by CHEF DAN:
Serves 20-30
INGREDIENTS:
MARINATE;
10 pounds, skinless, boneless, chicken tenders
1/4-cup ginger powder
1/4-cup ground cumin
2 teaspoons salt
2 teaspoon cayenne pepper
GARBANZO BEANS:
1 (48oz) can garbanzo beans, drained and rinsed
1 quart plain yogurt
1/4-cup curry powder
1/4-cup lemon juice
2 teaspoon sea salt
1 onion, chopped
1 bunch fresh cilantro
SALAD:
5 heads romaine lettuce, torn
1/2-cup lemon juice
1/4- grape-seed oil
DIRECTIONS:
1. Combine all ingredients for the chicken.
2. Chill for 1 hour.
3. Combine all ingredients for the garbanzo beans.
4. Cover and chill.
5. Sauté marinated chicken in little olive oil and cook for about 15 minutes.
6. Chill the cooked chicken.
7. In a large bowl throw in the torn romaine.
9. Throw in the fresh cilantro.
10. Drizzle with lemon juice and grape-seed oil.
