CHICKEN CHICKPEA SALAD WITH CUCUMBERS by CHEF DAN:
Serves 2-4
INGREDIENTS:
2 cooked boneless, skinless, chicken breasts, cut into bit size pieces
1 (15oz) can chickpeas (garbanzo beans) rinsed and drained
3 baby cucumbers, thinly sliced
4 green onions cut on the bias in 1-inch pieces
1/4-cup fresh mint or basil, torn
7 cherry tomatoes, halved
1/2 cup Greek yogurt
2 garlic cloves, minced
3-4 cup mixed salad greens
1/3 cup crumbled feta cheese
DIRECTIONS:
1. Combine first 8 ingredients together, toss gently.
2. Gently fold in mixed salad greens and feta cheese.
