ROASTED CAULIFLOWER WITH CURRY by CHEF DAN:
Serves 4
INGREDIENTS:
1 head cauliflower, cut into florets
1 tablespoon olive oil
2-3 garlic cloves, minced
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon curry powder
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper
1 tablespoon parmesan cheese
DIRECTIONS: (PRE-HEAT OVEN TO 4OO DEGREES)
1. Coat a baking sheet with cooking spray.
2. In bowl, stir together, olive oil, garlic cloves, mustard seeds, cumin seeds, curry powder, lemon juice, and salt and pepper.
3. Add cauliflower, tossing to coat thoroughly with spice mixture.
4. Arrange cauliflower in a single layer on prepared baking sheet.
5. Roast until florets are slightly browned.
6. Test by piercing with a tip of a paring knife.
7. Bake about 30-35 minutes.
8. Sprinkle generously with parmesan cheese.
