CHICKEN TIKKA MASALA by CHEF DAN:
Serves 4
INGREDIENTS:
1 pound chicken breasts, skinless, boneless, cut into bite size pieces
3 tablespoons olive oil
1 onion, chopped
4 garlic cloves, peeled and finely chopped
1 thumb size fresh ginger, peeled and grated
1 handful fresh cilantro, chopped, divided
1 15oz can diced tomatoes
2 teaspoon chili powder
1 teaspoon garam masala
1 tablespoon tomato puree
2 tablespoons lime juice
1 cup plain yogurt
DIRECTIONS:
1. In a glass bowl, place the chopped chicken, garlic, and ginger, salt @ pepper to taste, fresh cilantro, 1 tablespoon lime juice and 1 tablespoon olive oil.
2. Let sit for 30 minutes or more.
3. Heat 1 tablespoon oil in skillet over medium-high heat.
4. When the oil is sizzling add chicken mixture and sauté for about 5- 7 minutes.
5. Remove chicken and set aside.
6. In the same skillet add the remaining oil and heat until sizzling.
7. Add onion, chili powder, garam masala, and sauté for 5 minutes.
8. Add diced tomatoes, stir and cook 1 minute.
9. Stir in yogurt and simmer for another 4- 5 minutes.
10. Add the chicken and simmer for another 4-5 minutes.
11. Add the tomato puree and remaining lime juice.
12. Sauté for 1 minute and garnish with fresh cilantro.
13. Serve with warm naan bread and jasmine rice.
