CRUSTED COD WITH PISTACHIO NUTS by CHEF DAN:

Serves 2



INGREDIENTS:



2 cod fillets (about 6 ounces each) or other firm white fish

1/2-cup shelled pistachio, roasted and salted

1/2-cup fresh cilantro

2 garlic cloves, sliced

2 tablespoons olive oil

1 Tablespoon lemon juice

Lemon wedges for serving



DIRECTIONS:       (PRE-HEAT OVEN TO 425 DEGREES)



1.    Line a baking sheet with foil.

2.    Place fish on sheet.

3.    Season with sea salt and freshly ground black pepper.

4.    Set aside.

5.    In a food processor, pulse pistachio nuts, cilantro, lemon juice and garlic until coarsely chopped about 15 seconds.

6.    With machine running, drizzle in olive oil in a steady stream.

7.    Blend until finely chopped.

8.    Season with sea salt and freshly ground pepper.

9.    Top fish with pistachio mixture.

10. Roast until fish is opaque about 10-12 minutes.

11. Serve with lime wedges.
