GRANDPA'S HOBO BREAKFAST IN A CAST IRON SKILLET ENJOY DAN:

        GRANDPA'S HOBO BREAKFAST IN A CAST IRON SKILLET by CHEF DAN:
Serves 8

INGREDIENTS:
1 (16 Oz) package frozen hash browns
3 scallions, bias-sliced into 1/2-inch lengths
1 red bell pepper, diced
6 crimini mushrooms, sliced
1 garlic clove, minced
16 ounces country style bulk sausage
8 eggs beaten
1/2-pound Monterey Jack cheese
Sea salt and freshly ground black pepper to taste
Toppings sour cream, salsa and chives

DIRECTIONS:    (PREHEAT OVEN TO 350 DEGRESS)
1.   Place sausage in a cast-iron skillet over medium-heat, sauté until browned.
2.   Add scallions, bell pepper, and mushrooms, sauté for about 5 minutes.
3.   Add garlic and sauté for 1 minute.
4.   Stir in potatoes and a pinch of salt, cook 10 minutes stirring often.
5.   Remove from heat.
6.   Stir in cheeses and mix to combine.
7.   Make 8 indentations in potato cheese mixture, using the back of a spoon.
8.   Break 1 egg into each indentation.
9.   Bake in preheated oven for about 12-14 minutes or until egg are set
