ROASTED GARLIC AND RED PEPPER HUMMUS ENJOY DAN:

PACKAGED ROASTED GARLIC, AND RED PEPPER HUMMUS SOUP
FOR THE SOUP KITCHEN
                                                                  By CHEF DAN:
Serves 30-40

INGREDIENTS:
22 cups vegetables broth or water
3 tablespoon olive oil
6 cups chickpeas, soaked overnight
3 cups mung beans, soaked overnight
7 garlic cloves, minced
1/3-cup EACH cumin, smoked paprika, cinnamon and turmeric
Sea salt and freshly ground black pepper to taste
30 (7 Oz) packages roasted red pepper and garlic hummus

DIRECTIONS:
1.   In a stock-pot add broth chickpeas, mung beans, garlic, cumin, paprika, cinnamon, tarmac, salt and pepper.
2.   Bring to a boil; cover and simmer for 1-2 hours or until chickpeas are
soft.
3.   With an immersion blender blend until smooth.
4.   Add packages of hummus and blend everything together.
