MEXICAN STYLE (CARNE ASADA) GRILLED STEAKS ENJOY DAN.;

STEWARTS MEXICAN STYLE (CARNE ASADA) GRILLED STEAKS by CHEF DAN:
Serves 10
4-6

INGREDIENTS:
2 Teaspoons salt
2 teaspoons cumin
2 teaspoons chili powder
1(4 pound) flank steak, trimmed, pounded 1/4-inch thick and cut with grain into 4 equal steaks.
2 garlic clove, smashed
Lime wedges

DIRECTIONS:
1.   Combine salt, cumin. And chili powder in a bowl.
2.   Sprinkle salt mixture evenly over both sides of steaks.
3.   Transfer steaks to wire rack and set in rimmed baking sheet.
4.   Refrigerate, uncovered, for up to 24 hours.
5.   On a gas grill turn all burners to high, cover and heat grill until grill is hot, about 15 minutes.
6.   Clean and oil grate.
7.   Place steaks on the grill and grill uncovered 2-4 minutes.
8.   Flip steaks and cook 2-4 minutes longer.
9.   Transfer to a carving board and tent with aluminum foil for 5 minutes.
10.                Rub garlic thoroughly over 1 side of the steaks.
11.                Slice steaks against grain into 1/4-inch thick slices.
12.                Serve with lemon wedges.
