MU PO TOFU WITH PORK ENJOY DAN:

                                   MU P0 TOFU WITH PORK by CHEF DAN:
Serves 4
1/2-pound ground pork
1 tablespoons oyster sauce
2 tablespoon dry sherry
1 teaspoons cornstarch,
1 (14 Oz) package firm tofu, cut into cubes

1/3-cup chicken broth
2 tablespoon grape-seed oil
2 tablespoons soy sauce
2 teaspoons red curry paste
1 teaspoon cayenne pepper
1/2-teaspoon Sichuan pepper
3 garlic cloves, minced
1 thumb-size fresh ginger
4 scallions, chopped

DIRECTIONS:
1.   Combine ground pork and next 3 ingredients, mix will and let sit for 20 minutes.
2.   Set aside.
3.   Add 1 tablespoon oil in a wok over high-heat when sizzling.
4.   Add cubed tofu and stir-fry until golden brown, about 4-5 minutes.
5.   Set aside.
6.   Add reaming oil and over medium-high heat; when sizzling.
7.   Add red curry paste,  cayenne pepper, Sichuan pepper, garlic and ginger’; stir-fry, stirring until fragrant, about 1 minute.
8.   Add ground pork, broth, cooked tofu, and soy sauce, stir fry for 4-5 minutes.
9.    Top with scallions.
