SOMETHING FOR A COLD RAINY DAY ENJOY DAN:

                            POTPIES WITH STEAK & ONIONS by CHEF DAN:
Serves 4

INGREDIENTS:

1 pound boneless beef top round steak, cut into 1/2-inch cubes
2 cups beef broth
1 cup marinara sauce
1 tablespoon olive oil
2 onions, sliced and separated into rings
2 sweet potatoes, diced into 1/4-inch pieces
2 carrots, finely chopped
1/2-frozen peas

CRUST:
1 cup all-purpose flour
1/4-cup parmesan cheese
1-1/2-teaspoons baking powder
1 teaspoon paprika
1/4-teaspoon dried rosemary
4- Tablespoons butter, melted
1/2-cup milk
A pinch of salt

DIRECTIONS:                                       (PRE-HEAT OVEN TO 450-DEGREES)
         
1.    In a skillet, heat oil over medium-heat.
2.    Add onions ,peas, sweet potatoes and carrots.
3.    Season with coarse salt and freshly ground black pepper.
4.    Cook stirring occasionally for about 8-10 minutes.
5.    Add beef and cook until no longer pink about 3-4 minutes.
6.    Add marinara sauce and beef broth.
7.    Bring to a boil and reduce to simmer. Stirring occasionally, until meat mixture begins to thicken, about 10-12 minutes.
8.    In a bowl, whisk flour, Parmesan cheese, baking powder, rosemary, paprika, and 1/2-teaspoon salt.
9.    Make a well in the center, and add butter and milk.
10. Stir just until dough comes together.
11. Spoon meat mixture into four 8oz ramekins.
12. Mound dough on top.
13. Place on a baking sheet and bake until top is golden brown, about 10-12-minutes.
