FALL IS HERE AND SO ARE FALL APPLES AND ROMAINE LETTUCE ENJOY DAN:

AUTUMN APPLE SALAD WITH CREAMY MOLASSES DRESSING by CHEF DAN:
Serves 2-4

INGREDIENTS:

DRESSING;

3 tablespoons molasses
3 tablespoons light mayonnaise
2 tablespoons COLAVITA Aceto di Vino raspberry wine vinegar
2 teaspoons DAN’S honey
2 tablespoon grape-seed oil
Coarse salt and freshly ground black pepper

SALAD:

2 heads of romaine lettuce, chopped
2-3 apples Gala or Red Delicious or any fall apple
1/2-cup red tart cherries
1/2-cup walnuts, chopped, toasted in a dry cast iron skillet, over medium-heat for a couple of minutes

DIRECTIONS:

1.    Whisk together molasses, mayonnaise, raspberry vinegar, and honey in a bowl.
2.    Whisk oil in gradually until mixture thickens slightly.
3.    Season with salt and pepper.
4.    Toss in chopped romaine lettuce, apples, cherries and half the toasted walnuts.
5.    Toss enough dressing to coat.
6.    Divide salad equally amount plates.
7.    Sprinkle with remaining walnuts.
