OH YEA MORE COLD SOUP, CUCUMBER THIS TIME. ENJOY DAN:

CUCUMBER COLD SOUP by CHEF DAN:


Serves 4-6



INGREDIENTS:



1 tablespoon olive oil

4- 5 cucumbers, peeled, seeded and cut into bit size pieces

4 tomatoes cut into bite size pieces

1 bell pepper, cut into bite size pieces

1 onion, chopped

2 tablespoons lemon vinegar or sherry vinegar

1 tablespoon dill, minced

1 tablespoon fresh parsley

4 garlic cloves, minced

1 teaspoon sugar

S&P to taste



DIDRECTIONS:



1. Combine the cucumber and tomatoes in a blender, reserving 3/4- cup for each garnish.

2. Add bell pepper, onion, vinegar, and 1 teaspoon each dill and parsley, 2 cloves of garlic and the sugar; puree till smooth.

3. Pass through a fine mesh strainer into a bowl.

4. Season with salt and refrigerate until chilled 1-2 hours.

5. Serve with garlic croutons.
