INSTANT POT RED LENTIL SOUP ENJOY DAN:


          INSTANT POT TURKISH RED LENTIL SOUP by CHEF DAN:
Serves 4

INGREDIENTS:
1-cup lentils rinsed and picked over
2-tablespoons olive oil
1-onion, finely diced
1-carrot, diced
4-whole garlic cloves
2-teasppon ground cumin
1-teaspoon EACH paprika, & curry powder
1/2-teaspoon EACH dried mint, oregano & turmeric
1/4-teaspoon EACH red pepper flakes & black pepper
1-(28 Oz) can diced tomatoes
3-cups beef broth
3-cups water
1-cup kale, chopped, tough ribs removed
1-tablespoon lemon juice

DIRECTIONS:
1.   Push the SAUTE mode and it reads hot add oil.
2.   Add onion, carrots and garlic, sauté for 4 minutes.
3.   Stir in cumin and next 6 ingredients, cook 1 minute.
4.   Pour tomatoes, broth, water, red pepper, salt & pepper into the pot.
5.   Close lid & press PRESSURE COOK on high for 20 minutes.
6.   Close pressure value.
7.   Allow pressure to release naturally for 5 minutes.
8.   With an immersion blender blend until lightly blend and slightly thick.
9.   Stir in kale, lemon juice, salt & pepper.
10  Press SAUTE Mode, bring soup to a simmer & cook 5-more minutes.
