BAKED HAM WITH PINEAPPLE

INGREDIENTS:
1-spiral fully cooked ham (about 7 pounds)
1-(20
Oz) can sliced pineapple
1-1-inch
fresh ginger, grated
1/2-cup
brown sugar
1/2-teaspoon
ground cinnamon
1/4-teaspoon
ground cloves
DIRECTIONS:
(PRE-HEAT OVEN TO 325 F)
1.
Take
ham out of the refrigerator about 2 hours before baking.
2.
Remove
ham from packaging.
3.
Rinse
and pat dry with paper towels.
4.
Combine
pineapple juice from the can (about 1-cup).
5.
Combine
juice with ginger and next 3 ingredients.
6.
In
a sauce pan add pineapple mixture, over medium-high heat.
7.
Bring
to boil; then reduce heat to medium-low and simmer for about 15 minutes.

It
should be thick and syrupy.

Place
pieces of pineapple into ham slices.

Brush
1/2-the glaze onto the ham.

Reserve
the remaining glaze for later.

Use
roasting rack and place ham in pre-heated oven and bake 1 hour.

Remove
from oven baste with remaining glaze.

Pace
back into the oven bake for about 10 minutes.

Internal
temperature should be 160 F.

Allow
to rest 15 minutes before serving.
