BUBBLES AND
SQUEAK by CHEF DAN:
Serves
4-6
INGREDIENTS:
1-tablespoon
butter
1-tablespoon
grape-seed oil
1/2-onion,
finely diced
1/2-cup
cooked brussels sprouts
1/2-cup
cooked cabbage, shredded
1/2-cup
grated carrots
2-cups
left over mashed potatoes
1/2-teaspoon
paprika
Salt
and pepper to taste
Fried
egg to serve
DIRECTIONS:
1.
Gently
heat the butter and oil in skillet over medium-heat when sizzling
2.
Add
onion a& cook for 5 minutes.
3.
Turn
heat up to medium-high & add the brussels sprouts, paprika, cabbage & carrots
4.
Season
with salt and pepper.
5.
Cook
5 minutes, or until the vegetables are soft.
6.
Add
mashed potatoes to the skillet and stir briskly, until vegetables & potatoes
are well combined.
7.
Press
down on the skillet and fry for 5-7 minutes, until the bottom is browned &
crisp.
8.
Drizzle
with a little oil all around the edges.
9.
Using
the lid of the skillet, invert the bubble & squeak into the lid.

Then
slide back into the skillet and cook the other side.

Cook
another 5-7 minutes.

Serve
cut into wedges and topped with fried eggs.
