POTATO
LATKES WITH ALMOND MEAL by CHEF DAN:
Makes
10 latkes
INGREDIENTS:
1-1/2-pounds
russet potatoes (about 2 large)
1
onion, peeled
1/4-cup
almond meal (from Trader Joe’s)
1
teaspoon baking powder
Sea
salt and freshly ground pepper to taste
A
pinch of sugar
4
tablespoon grape-seed oil
FOR
SERVING:
Sour
cream
Greek
yogurt
Fresh
chives
Smoked
salmon
Applesauce
DIRECTIONS:
1.
Shred
the potatoes and the onions using the large hole on a box grater.
2.
Place
the shredded potatoes and onion into a dish towel and squeeze out as much
liquid ass you can.
3.
In
a bowl, whisk together the eggs, almond meal, baking powder, sugar, S. &.P.
4.
Add
shredded mixture and stir until evenly coasted.
5.
Using
your hands to form patties about 2-1/2-inches across and 1/3-inch thick.
6.
In
a skillet heat the oil over medium-high heat and when sizzling.
7.
Place
into the skillet, and cook until golden brown about 3-4- minutes per side.
8.
Repeat
with remaining mixture.
9.
Server
the latkes warm and top with your favorite topping.
