SPAGHETTI
SQUASH WITH APPLES AND CRANBERRY BAKE by CHEF DAN:
Serves

INGREDIENTS:
1
spaghetti squash
3
tart cooking apples (Granny Smith) peeled and cut into 1/2-pices
1/2-cup
fresh cranberries
1/2-cup
brown sugar
1/4-cup
butter
1
tablespoon all-purpose flour
1
teaspoon sea salt
3
teaspoons cinnamon
1
teaspoon nutmeg
1
cup Parmesan cheese
3
tablespoon fresh sage, torn
DIRECTIONS: (PREHEAT OVEN TO 375 DEGREES)
1.
Lightly
spray the sides with Pam on a 7-X-11baking dish.
2.
Wash
squash and poke severe al holes in the squash.
3.
Place
in prepared baking dish and bake about 50 minutes.
4.
Remove
from oven and let cool.
5.
Using
a fork, scrape the “spaghetti” like strands of the squash and discard.
6.
In
a bowl mix together brown sugar, flour, sea salt, cinnamon, and nutmeg.
7.
Pour
a layer of the cut spaghetti squash on the bottom of the baking dish.
8.
Placer
apples on top and sprinkle with cranberries.
9.
Sprinkle
everything with brown sugar flour mixture.
10.
Dot
with butter.
11.
Bake
for about 50 minutes until cooked through and lightly browned.
12.
The
last 10 minutes add Parmesan cheese.
13.
Top
with fresh sage
